Pork Tenderloin with Spicy Coconut Sauce

- 18 oz pork tenderloin sinew free, boneless cut in cubes
- 4 cloves garlic minced (half to marinate the pork)
- 1 medium red bell pepper chopped
- 1 tsp coriander
- 1 tsp cardamom
- 1/2 tsp sea salt
- 1 shallot chopped
- 1 tsp coconut oil
- 1 cup coconut milk
- 1/2 cup water
- 2 tsp tamari sauce
- 4 tsp lime juice fresh
- 2 pinch cayenne pepper ground
- 2 pinch black pepper ground
Marinate the meat with garlic, coriander, cardamom, sea salt and set aside for 30 minutes. (see note)
In a saucepan the coconut oil, then sauté the shallot until it gets crystalized
Add leftover garlic and sauté for about 2 minutes or until its starts to golden
Combine pork tenderloin and cook it in medium-low heat for 15 minutes with the lid on. Don’t let it dry out, if necessary add 1 oz of water at the time through the cooking process
Combine remained ingredients and cook it in low heat for another 15 minutes. Serve over brown rice or quinoa and enjoy this beautiful meal!

Whenever I can, I like to season the meat the day before and let it marinate overnight for more flavor.
